August is officially in the rearview mirror, and I am ready for fall!

Fall means cooler weather and pumpkin EVERYTHING!

We are blessed to experience all four seasons here in South Dakota and fall is by far my favorite.

As I was longing for fall and all that comes with it, I found myself in the kitchen experimenting with this delicious new pumpkin recipe.

Instead of starting from scratch, I decided to put a pumpkiny {yeah, it isn’t a word..but it should be!} spin on the delicious baked donut recipe I created earlier this year.

These Purely Pumpkin Baked Donuts embody all things fall and wait for it…they are actually healthy!

I used our gluten-free flour blend, coconut sugar, organic pumpkin puree, and a little butter for added richness.

The fun thing about these pumpkin donuts is the three completely different ways you can “dress them up”.

You can choose the famous combo of a maple cream cheese frosting, a maple coconut butter glaze, or one of my kids favorites- rolled in cinnamon and sugar.

There is no wrong way to “accessorize” them!

Keep in mind that the cinnamon and sugar combo is not the cleanest eating option, but after you see all the pure and healthy ingredients in the donut, you might not be so concerned about topping them with sugar!

Even though these Purely Pumpkin Baked Donuts are leaps and bounds healthier than your typical donut, it is still important to serve them with protein and additional whole foods.

A typical example of a “kid-friendly donut breakfast” at our house would include serving it with scrambled eggs and fresh fruit.

Oh, and I need to also mention that these are best when you eat them fresh out of the oven {obviously, you will cool a bit before frosting}.  But that shouldn’t be a problem….right?

      Ingredients
      Donuts
      • 3/4 cup gluten-free flour blend Click HERE for Recipe
      • 3/4 tsp xanthum gum
      • 1/4 cup coconut sugar
      • 3/4 tsp baking powder
      • 3/4 tsp pumpkin pie seasoning
      • 1/16 tsp sea salt
      • 1/4 cup pumpkin puree
      • 1 egg
      • 2 Tbsp butter, softened or melted
      • 2 Tbsp almond milk
      • 3/4 tsp vanilla extract
      Maple Cream Cheese Frosting
      • 1 oz cream cheese, room temp
      • 1 Tbsp maple syrup
      • 1 tsp milk
      Maple Coconut Butter Glaze
      • 1 Tbsp maple syrup
      • 2 tsp coconut butter
      Cinnamon and Sugar Topping
      • 2 Tbsp butter, melted
      • 3 Tbsp sugar
      • 1 tsp cinnamon
      Servings: donuts
      Instructions
      Donuts
      1. Preheat oven to 375F. Spray donut pan with non-stick cooking spray.
      2. Mix dry ingredients together in small bowl. Mix wet ingredients together in separate small bowl. Add the wet ingredients to the dry ingredients and stir until combined.
      3. Scoop dough into the corner of a quart-sized storage bag. Cut off the tip of the bag and pipe into greased donut pan. (You may need to wet your fingers and smooth out the batter to make it more even.)
      4. Bake for 25 minutes or until a toothpick inserted into donut comes out clean and donuts are a deep golden brown. Allow to cool before adding your favorite topping!
      3 Toppings Options
      1. Maple Cream Cheese Frosting: Whip together all 3 ingredients in a stand mixer or with a hand mixer until combined. Spread frosting on donuts with a knife and sprinkle with cinnamon or coconut sugar.
      2. Maple Coconut Butter Glaze: Mix the 2 ingredients together and drizzle over donuts with the tines of a fork.
      3. Cinnamon-Sugar Topping: Place melted butter in a bowl just wide and shallow enough to dip the donut. Then mix together the cinnamon and sugar together in a small bowl and pour out onto a small plate. Dip one side of the donut in the melted butter and then place that same side into the sugar mixture to coat the top of the donut.
      Recipe Notes
      1. I have used whole wheat flour to make these donuts and they turn out just as well. I do add another Tbsp of milk to thin out the batter a little.
      2. The gluten-free version of these donuts is best eaten straight out of the oven as gluten-free treats just don't have the same texture the next day. The whole wheat version, however, does taste well after being refrigerated. I usually remove them from the refrigerator and allow them to warm to room temperature and add my topping of choice!
