Apples dipped in peanut butter is my daughter’s favorite after-school snack.
Each time I offer her an apple she sweetly asks, “Can I have peanut butter with it?”
And each time, I smile and place a generous dollop of the creamy goodness on her plate of sliced fruit.
Of course, I would love to eat as much peanut butter as she does, but that is just not meant to be for me and my skinny jeans.
That is where this Skinny Peanut Butter Fruit Dip for One comes in to save the day!
I am happy to share my little peanut butter secret with you…
powdered peanut butter!
I was introduced to this delicious peanut butter “alternative” a couple years ago and I use it almost daily. It consists of peanuts that have been pressed into a powder. Because of this process, much of the fat and calories have been eliminated.
Now don’t get me wrong, I am all about eating plenty of healthy fats and calories, but I do enjoy this particular “skinny” food.
I alternate between this peanut butter fruit dip and my Skinny Chocolate Dip for One almost every.single.night.
Here are a few other ways I like to enjoy powdered peanut butter:
-mix it with water and use as the filling for Ants on a Log (celery, PB, raisins)
-combine it with water and dip carrots sticks
-my ahhhmazing Apple Nachos with Salted Caramel PB Sauce
-add it to my chocolate smoothie…all the flavors of a peanut butter cup!Skinny Peanut Butter Fruit Dip for One #yummy #cleaneating #snack Click To Tweet
I typically buy my powdered peanut butter at Sam’s Club as it is priced well, but I have also purchased it on Amazon. I have not noticed a difference between the different brands- PB2, PBfit, NakedPB.
This healthy snack will quickly become your go-to snack just like it has for me! You can even make several batches in advance and store in the fridge!
Here are the ingredients you will need:
1/2 cup plain Greek yogurt
2 Tbsp powdered peanut butter
1 tsp coconut sugar
1/2 tsp vanilla extract
Dash of salt
Apple, banana, or other fruit
