The One and Only Crock Pot Chicken

This healthy chicken is so versatile that I use it in everything from enchiladas and taco salads to chicken lasagna and Greek inspired salads. I love having this already cooked protein in my fridge during the week to top salads or use in tacos for a quick and easy meal. This recipe would be perfect to double and put half in the freezer! Plus, it's gluten-free! https://www.groundedandsurrounded.com/recipe/one-and-only-crock-pot-chicken/

This is my sister, Heidi’s, favorite shredded chicken recipe.  The One and Only Crock Pot Chicken seems to be my go-to recipe when we have family over because it is so simple and incredibly versatile.

The ladies of the family usually top their salads with it while the carb lovin’ men prefer it in tortillas along with other typical taco ingredients. I have used it on everything from enchiladas and taco salads to chicken lasagna and Greek inspired salads.

one and only chickenIt is hard to categorize this shredded chicken as Mexican or Italian because it uses ingredients from both genres.  My advice is to just make it, taste it, and then decide if you feel like it in tacos or a Greek salad. Ha!

All I know, is this cooked protein is one I want to have in my refrigerator during the week because of how easy it is to use in various recipes! I typically double this recipe and put half in the freezer. It just makes me happy to have cooked protein in our freezer! Having cooked protein ready to thaw out in a flash makes weeknight meal preparation so much easier.

I think it is so smart to prepare a double batch of your favorite meals because you know you will want to eat it again and typically sooner than you think!
