Holiday Eggnog French Toast Bake
This easy homemade recipe is Christmas in a pan. It is dairy free and can be made with the overnight option or 2 hour option. Finish it off with maple syrup, egg nog glaze, or whipped cream. Use french bread, eggs, cinnamon, nutmeg, and dairy-free eggnog to make the most delicious breakfast, brunch, or brinner this season.

Ingredients
  • 8Tbsp butter (1 stick)
  • 1cup coconut sugar (or any sugar you have on hand)
  • 1loaf french bread (14 oz), cut into 1″ pieces
  • 1tsp ground cinnamon
  • 1/2tsp ground nutmeg
  • 8 eggs
  • 2cup So Delicious eggnog (DF)
  • 2tsp vanilla extract
  • 1/4tsp salt
Instructions
  1. Spray a 9×13 glass pan generously with non-stick cooking spray. Set aside.
  2. In a small saucepan, melt butter over medium heat. Add coconut sugar and combine. DO NOT BOIL! You will end up with caramel. 😉 Remove from heat. Pour into prepared glass pan.
  3. Arrange bread cubes on top of sugar mixture.
  4. In a small bowl, whisk together eggs, eggnog, cinnamon, nutmeg, salt, and vanilla to make the custard. Pour the custard evenly over bread cubes. Press down gently on bread to make sure it soaks up the custard mixture.
  5. Tightly cover glass pan and refrigerate 2 hours to overnight. It depends on the time frame you are on!
  6. Preheat oven to 350F. Bake covered for 45 minutes. Remove foil. Bake an additional 15-20 minutes or until the entire casserole is puffed and golden brown on top. A knife inserted into the middle should come out relatively clean .
  7. When serving, drizzle with maple syrup, homemade eggnog glaze (powdered sugar and eggnog combined into a smooth consistency), or whipped cream!
Recipe Notes

Any bread would work in this recipe. If you choose a different type of bread just make sure you have at least 14oz of it.

I love making my own eggnog from Lauren’s recipe at Oatmeal with A Fork, but if you don’t choose to do that the So Delicious brand has an excellent one that has very clean ingredients.

I cut this recipe in half and bake it in an 8×8 pan if it is just the 4 of us. A 9×13 would be dangerous if left in the fridge calling to me at all hours of the day. 😉
