Gingerbread Energy Bites

I know.

My obsession with energy bites knows no bounds.

But trust me, these healthy Gingerbread Energy Bites are a keeper!

6 Ingredient Gingerbread Energy Bites | This easy no bake recipe will quickly become your favorite healthy snack especially during the holidays! Gluten-free dates, almonds, coconut, molasses, and pumpkin pie spice combine to create a clean eating, Paleo, 21 Day Fix, and vegan recipe that is perfect for families, kids and adults alike. Look no further for the best low carb Christmas dessert or snack!

Gingerbread flavors are my favorite during Christmas and I knew there had to be a way to incorporate those flavors into a healthy treat.

Enter these Gingerbread Energy Bites.

You will notice the end result is not the typical spherical bite, but a square.

Two of my favorite treats are square shaped: fudge and brownies! I love that these bites resemble them in that way.
All the ingredients in a food processor to make vegan bliss bites for Christmas.

The truth is, this recipe would be a great alternative to fudge and other holiday sweets

Denying myself a piece of fudge isn’t how I choose to live my life. I have come to the realization that fudge is an occasional treat while these squares can be an every day, twice a day treat!

Quantity over quality…errrr wait a minute… πŸ˜‰

The six healthy ingredients that comprise this recipe will charm your holiday guests, coworkers, and neighbors. These squares also make a great sweet treat for your kid’s school parties!

I used pumpkin pie spice and molasses to flavor the batter. Gingerbread obviously has to have ginger and pumpkin pie spice contains a generous amount of ginger, cinnamon, nutmeg, and cloves.

In case you are wondering, yes, these bites have been approved by my family. My husband ate half the container in one sitting.

Does he not know how expensive almonds are? Ha!

You may choose to press your dough into a smaller pan than I did to make it even more “fudge-like”.

I used a 6″x9″ bread pan, but a smaller pan would produce thicker squares.

Or you can switch it up all together and do the standard version of rolling the dough into balls

I would love to know what your Gingerbread Energy Bites look like. Squares or spheres?

Equipment

  • food processor
  • spatula

Ingredients

  • 1 cup almonds
  • 1 cup pitted and dried dates
  • 1/2 cup shredded unsweetened coconut
  • 2 Tbsp molasses
  • 1 tsp pumpkin pie spice
  • 1/8 tsp sea salt
  • 1 TBSP water, if needed

Instructions

  • Line a bread pan with saran wrap. Set aside.
  • Add all ingredients, except water, to a food processor.
  • Process on high until a crumbly and sticky mixture form. Take some mixture and see if it sticks together enough to form into a ball. If it does, go ahead and press your mixture into the saran lined pan. If not, pulse in a little water to wet the mixture just enough to make it hold together.
  • Place pan in freezer for 1/2 hour or fridge for 1 hour to allow the mixture the harden. After the mixture is slightly hardened, lift out the saran wrap out of the pan. Then, cut the mixture into squares, sprinkle with additional shredded coconut and store covered in the fridge or freezer.
