My obsession with energy bites knows no bounds.
But trust me, this healthy holiday variety is a keeper!
Gingerbread flavors are my favorite during Christmas and I knew there had to be a way to incorporate those flavors into a healthy treat. Enter these Gingerbread Energy Bites.
You will notice the end result is not the typical spherical bite, but a square.
The truth is, this recipe would be a great alternative to fudge and other holiday sweets.
Denying myself a piece of fudge isn’t how choose to live my life I have come to the realization that fudge is an occasional treat while these squares can be an every day, twice a day treat!
Quantity over quality…errrr wait a minute… 😉
The six healthy ingredients that comprise this recipe will charm your holiday guests, coworkers, and neighbors. These squares also make a great sweet treat for your kid’s school parties!

In case you are wondering, yes, these bites have been approved by my family. My husband ate half the container in one sitting.
Does he not know how expensive almonds are? Ha!
You may choose to press your dough into a smaller pan than I did to make it even more “fudge-like”.
I used a 6″x9″ bread pan, but a smaller pan would produce thicker squares.
Or you can switch it up all together and do the standard version of rolling the dough into balls.
