Cornbread has been a part of my life since who knows how long.

I am not sure if I can eat a bowl of chili without it. Ha! 

However, cornbread is not known for being healthy. It is typically laden with vegetable oil, white sugar, and enriched flour. That all changes with this recipe though!

Oat flour replaces enriched white flour. I make my own by adding old-fashioned oatmeal to my Magic Bullet (or food processor) and pulsing until the mixture resembles flour. 

I replaced vegetable oil with plain Greek yogurt. Not only did I eliminate a ton of calories (if you are counting) but the yogurt adds protein. The 2 eggs do too!

And lastly, pure maple syrup replaces the white sugar to add a hint of maple flavor to this fluffy delicacy. Because who am I kidding, cornbread is always better when it’s topped with a little butter, maple syrup, or honey.

I choose to use unsweetened almond milk in this recipe too, but any milk will do.

Ingredients
  • 1/2 cup plain Greek yogurt
  • 1/2 cup unsweetened almond milk
  • 2 eggs
  • 1/4 cup pure maple syrup
  • 1 cup oat flour
  • 1 cup cornmeal
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt

Instructions
  1. Preheat oven to 400F. Grease an 8x8 glass pan with non-stick cooking spray. Set aside.
  2. In a large bowl, whisk together all the wet ingredients- yogurt, milk, eggs, and maple syrup.
  3. Then to that same bowl add in all the dry ingredients- oat flour, cornmeal, baking powder, baking soda, and salt. Mix until combined into a smooth batter.
  4. Pour into prepared pan and bake for 20 minutes or until golden brown on top and toothpick inserted comes out clean. Let cool for 15 minutes and serve plain, with butter, maple syrup, and/or honey!
Recipe Notes

*To make oat flour, pour a heaping cup of old fashioned oatmeal into a Magic Bullet, blender, or food processor and grind until it turns into a flour consistency. 

*Wheat flour works well too and resulted in a "dreamy cornbread". <----My husband's exact words. Ha!

  6. Sounds delicious – I was raised on cornbread, the kind with mostly cornmeal and little flour and no sugar. Add maple would really make it interesting.
