This recipe was created for my son’s Kindergarten Christmas party last year. I volunteered to bring a treat and wanted something festive, but the sugar cookie and fruit/veggie slots were already taken.

What was a mildly creative and holiday-themed foodie obsessed mom to do?

Well after an β€œaha moment” I found a bag of half-eaten (whoopsies, I’m neither confirming nor denying this…) Christmas M&Ms and added a few of them to whole food ingredients to make a healthy energy bites for kids!

If only I didn’t love them so much too. My self-control was that of a child myself…They taste   SO.    STINKIN’.   GOOD.

Oh well, it’s Christmas. Calories don’t count, right???

I used creamy natural peanut butter, but I am dying to try my friend, Kari’s, holiday butters in this recipe. She makes the most delicious nut butters in the world. Like shut the front door AMAZING! Her flavors are spot on, not to mention her adorable packaging.

You will also see, I used β€œsnow” in this recipe. Don’t fret if you live in sunny AZ, it is actually finely shredded unsweetened coconut. I used it in both the”batter” and as an optional topping by either sprinkling it on top or rolling the bites in it.

Freezing these dairy free 6 Ingredient Christmas Energy Bites is also a wonderful option.

I did it in an attempt to gain some sort of portion control with these holiday beauties, but it turned out they were just as delicious frozen.

A little more time consuming to eat as they were rock hard, but delicious nonetheless. Ha!

This year, I will be making a double batch of these babies and popping them in the freezer WEEKS before my kids’ school parties and quickly remove them the day of and bring to the celebration.

No one will be any the wiser, except the other school mommies that read this. Ha!

Equipment

Ingredients

  • 2 cups old fashioned oatmeal
  • 1/2 cup "snow" finely shredded unsweetened coconut
  • 1/2 cup Christmas M&Ms, coursly chopped or crushed
  • 1/4 cup hemp seeds or ground flax seed
  • 1/2 cup peanut or nut butter
  • 1/2 cup honey

Instructions

  • Mix all ingredients in bowl. Scoop out 1 Tbsp at a time. Press and roll into balls.
  • Chill in the fridge or freezer until ready to eat! Store bites in sealed container.
  • **If your mixture is very sticky, add more oats or chill mixture in the fridge for 30 minutes and then roll into bites.

Notes

I have used both regular green and red holiday M&Ms and Chocolate Holiday Mint M&Ms  in this recipe. Both flavors tasted amazing!

    I am currently working on these Christmas bites but I am having trouble. Lol for some reason the mixture won’t stick together to form a ball. Help!!

    • Hi! You probably need to add more peanut butter and honey. Depending on the brands of products used, sometimes we have to adjust the amount of ingredients here and there.       I don’t have the nutritional information. They are not low calorie though as they are fairly nutrient dense thanks to the oats, coconut, and hemp seeds, but super delicious. Merry Christmas!
