Skinny Chocolate Chip Cookie Dough for One

You all know I love cookie dough. 

And I honestly don’t care that there are raw eggs and white flour in it. 

Let me live my life. Mmmm-k? 😉

However, this Cheater Cookie Dough doesn’t have eggs OR white flour in it. So we can all rest assured that no one will be at risk of salmonella from this recipe. Ha!

By the way, does that really happen from cookie dough or are people just trying to stop all of us from living our lives?

The only dry ingredients in this recipe are plain protein powder and coconut flour. Yep that’s it!

As for the wet ingredients, it’s just unsweetened applesauce, vanilla extract, and almond (or butter) extract. 

Plus, a spoonful of mini chocolate chips to finish it off! Dunno!

Mix these 6 ingredients together and let the coconut flour soak up the liquids for a few minutes. Once the cookie dough is the correct consistency, by all means, dig in!

If the finished dough is too dry or too wet, add small amounts of the appropriate ingredients to make the cookie dough just how you want it.

I use Ariix PureNourish Natural Flavor Protein Powder and love it for many reasons. It’s comprised of plant proteins, has pre- and probiotics, low glycemic (won’t raise your blood sugar), contains nothing artificial, and uses natural sweeteners from fruits and vegetables.  

Depending on the protein powder you use, you may not need the vanilla or almond extract.

You may want to taste the cookie dough before adding the vanilla and almond extracts, just in case!

As for the sweetness of the cookie dough, you notice I don’t add additional sweetener to the recipe.

My protein powder, though not that sweet, adds plenty of sweetness along with the chocolate chips for my taste. 

However, like I said, everyone’s protein powder is different and everyone’s palates are different. If you try a couple little tastes of the dough and find it needs to be sweeter, add a little honey, maple syrup, or coconut sugar

Stevia is a great option too if you fancy it!

Ingredients
  • 2 Tbsp plain protein powder
  • 2 Tbsp coconut flour
  • 5 Tbsp unsweetened applesauce
  • 1/2 tsp vanilla extract
  • 1/8 tsp almond (or butter) extract
  • 1 Tbsp mini chocolate chips

Instructions
  1. Mix all ingredients together in bowl. Let dough sit for a few minutes to allow the coconut flour to absorb the liquid. If the dough is too wet, add a little more protein powder or coconut flour. If the dough is too dry, add a little more applesauce.
Recipe Notes

Depending on the protein powder you use, you may not need the vanilla or almond extract. You may want to taste the cookie dough before you add the vanilla and almond extracts, just in case.
