    I have recently been diagnosed with celiac disease and found your post ‘Gluten free- 20 tips to get started’ very informative. Helped me feel not so extremely overwhelmed but when I tried to download the pdf on label reading, I was unable.
    Is there a possibility that it could be sent to me?

  2. I’m going to make your choc chip cranberry bread, I have made the GF flour blend that you mentioned, I put the 2 tsp of xanthan gum in it, do I add 2 more when following the recipe? It says 2cups gf flour blend, 2 tsp xanthan gum etc. also can I substitute guar gum for the xanthin gum? Have you used dried cherries or cranberry’s in this recipe? What do you think? I thought about soaking them.

    1. Hi Lorrie Ann,

      Great questions, use only 2 tsp of xanthan gum or guar gum plus the gluten-free flour blend.

      I have not used dried fruit, but I know of other recipes that have and I am sure it will turn out well 🙂 I think you can use the dried fruit as is or feel free to soak them if you wish.
