It never fails, each year I end up with a HUGE harvest of zucchini and even with sharing much of it with others, I still have enough to eat every day, multiple times per day, and enough in the freezer for a year’s worth of pancakes.

I have said it time and time again, that one of the things I adore most about zucchini is it’s versatility.

Pinned!! Oh, those cookies, though…. and the zucchini boats!! Yum. Unfortunately we’ll have to wait for some zucchini-rich friends to share with us…. but it always happens, doesn’t it?
Bahaha! Yes, it WILL happen. Patience is a virtue, right? Yes, the cookies are a staple within our home during the summer now and I agree the zucchini boats…DELISH! For some reason they kind of remind me of stuffed peppers. I still need to make them. So many recipes, so little time. LOL
I am looking forward to sauteed zucchini with kale, chard, garlic scapes and a bit of spring onion (all fresh from the garden) with soft cooked eggs on top and a bit of homemade Kimchee for spice. Hmmm…all of these items are in my fridge/garden right now, except for the zucchini….come on little babies…GROW!!!!
