Zesty Crock Pot Shredded Chicken

This Zesty Crock Pot Shredded Chicken seems to be my go-to recipe when we have family over because it is so simple and incredibly versatile.

This is my sister, Heidi’s, favorite shredded chicken recipe.  

The ladies of the family usually top their salads with it while the carb lovin’ men prefer it in tortillas along with other typical taco ingredients. 

I have used it on everything from enchiladas and taco salads to chicken lasagna and Greek inspired salads.

Ingredients:
3-4 chicken breasts
1 cup homemade Italian dressing
2 Tbsp homemade ranch dressing mix
1/2 Tbsp garlic powder
1/2 Tbsp ground cumin
1/2 Tbsp ground chili powder
1/2 cup water

My advice is to just make it, taste it, and then decide if you feel like it in tacos or a Greek salad. Ha!

All I know, is this cooked protein is one I want to have in my refrigerator during the week because of how easy it is to use in various recipes!

This particular recipe is great if you are trying to shed a few pounds, but everybody else in your household isn’t because you can have it on a bed of greens with a light dressing and have the perfect figure-friendly meal!Gluten free shredded chicken on a fork with salad.

I typically double this recipe and put half in the freezer.

It just makes me happy to have cooked protein in our freezer! Having cooked protein ready to thaw out in a flash makes weeknight meal preparation so much easier.

I think it is so smart to prepare a double batch of your favorite meals because you know you will want to eat it again and typically sooner than you think!

Ingredients

  • 3-4 chicken breasts
  • 1 cup homemade Italian dressing
  • 2 Tbsp homemade ranch dressing mix Click HERE for Recipe
  • 1/2 Tbsp garlic powder
  • 1/2 Tbsp ground cumin
  • 1/2 Tbsp ground chili powder
  • 1/2 cup water

Instructions

  • Place chicken breasts in bottom of slow cooker.
  • Top the chicken breasts with the remaining ingredients.
  • Cook on LOW for 6-8 hours.
  • Shred chicken breasts with 2 forks and let soak in the flavorful juices for a few minutes then serve.
