This recipe has been on my mind for a year.

I made it on a whim before a day of family hiking  last summer.

I never imagined these energy bites would be so memorable. Yet 1 year later, I knew I had to make them again to share with you!

In prepping for any family adventure, I always prepare a lunch and snacks to tote along. Typical items that make the list are apples, baby carrots, sandwiches, crackers, something sweet, and plenty of water. On most occasions, the “sweet” are my favorite homemade granola bars or my other favorite version of energy bites.

I try to make items that can get squashed in my husband’s backpack, but will still taste amazing. If granola bars get crushed, we have granola. If energy bites get bent out of shape we have energy bars. We try to go with the flow during family adventures!

These little nuggets of deliciousness were one of the highlights of our day.

They radiated summer!

I don’t typically think of energy bites as a refreshing and light treat, but these were just that. Ingredients Needed:

1 cup almonds

1 cup pitted and dried dates

1/2 cup shredded unsweetened coconut

1 lime, zested (1 Tbsp) and juiced (1 Tbsp + 1 tsp)

Add all ingredients to food processor.

Step 2:

Process on high until a crumbly and sticky mixture form. Take some mixture and see if it sticks together enough to form into a ball. If it does, go ahead and form your bites. If not, add a little more lime juice or water to wet the mixture just enough to make it hold together.

      1. Can I get the nutritional information on this? My FIL needs to watch his sugars and “white” processed items. This would satisfy his sweet tooth.

        1. Hi Erica, there are 72 calories, 9 grams carbs, 4 grams fat, and 6 grams of sugar in each bite. The recipe makes 20 bites. You do not need to be concerned with “white” items as there are no processed foods in this recipe, only whole foods. I hope your F-I-L enjoys these!

    1. I freeze them in hopes of me not eating the entire batch during a moment of weakness. However, even in those moments I find a way to eat them! lol I don’t care that they are frozen solid, they are still amazing 😉

      1. Hi Sammi, thanks for the suggestions but he’s allergic to all nuts, even pistachios! It’s so hard finding good/healthy snacks & recipes that don’t contain nuts. Most trail mix, granola and alike are off-limits for nut-allergy sufferers! 🙁 Thanks again though…..

    1. Hi Jamie, I am not sure what container these bites would go in. I have not done the 21Day Fix program, but I do know that these bites are perfect for this diet because they only contain healthy whole foods and nothing processed. Happy snacking!

  6. Omg these will be perfect! I work at a school daycare and I’m always on the go! I’m also attending meetings where there is a lot of junk food on the tables. I’m just wondering, how long could these be stored in the fridge and in the freezer?
