Chopstick Chicken

If I had one favorite recipe as a kid it would be this one.

My mom only made Chopstick Chicken a few times a year, but when she did I looked forward to it all day!

My grandma passed it down to her and I am so thankful to have this incredibly simple recipe in my life today.

This 5 ingredient recipe hasn’t been “healthified” like so many others here at G&S, but I am okay with that. There are some recipes that you just don’t mess with and this is one of them.  πŸ˜‰

I have always wondered why this meal was called Choptick Chicken and then it dawned on me at 32 years old (I’m slow, okay!) that the rice combined with the chicken must merit it as a silly play on Asian food.

There is nothing Asian tasting about this casserole though.

It is all creamy, oniony, comforty deliciousness with some lean protein to top it off.

Chopstick Chicken can also be Chopstick Pork Chops if you wish!

My mom would use pork chops if she didn’t have chicken. Along those same lines, she substituted Cream of Mushroom soup for the Cream of Chicken soup on occasion. So that just leaves rice, water, and the onion soup packet!

I LOVE making this meal for others. Like new moms that have just come home from the hospital with their new little bundle of joy or a neighbor who is recovering from surgery.

Add a side salad or cooked veggie to this dish along with a sweet treat. Postpartum moms and those recovering from surgery need a little something sweet to recover. It’s science. It’s in all the latest medical journals. πŸ˜‰
